One of my favorite things to do while I am a summer stay-at-home-wife is taking care of the husband. Every evening I prepare Happy Hour. Usually this is a cheese display with salami and crackers. Today I went all out! I added this other cheese spread and added some wine. To make my father either proud or embarrassed, I poured some boxed wine to accompany the cheese. The biggest problem is that Scotty gets home at 4:30 and we typically like to eat at 5:30ish. With Happy Hour we are not usually that hungry but still find the room to eat any way. Oh well, it’s summer… not like we need to be in bathing suits or anything.. riiiight!! Who cares though, we love our little self-indulgences after a long day at the office (me at the laptop at home).

I quite possibly have the best husband in the world, as proved to be true yesterday evening. I was making my famous rice pilaf (thanks to mom for the recipe!) and as I have the whole concoction ready to be delivered to the oven, the tin bowl thingy collapsed sending a cup and a half of rice, two cans of beef consume, two cans of water, green onions and some butter splashing to the floor! I immediately start crying, because that solves everything! No, I was just really embarrassed by my clumsiness. I usually make the rice in a glass bowl, but it always stains it so I have been using the throw away ones from Costco- it’s just easier. I guess I didn’t have a firm grip on the bowl with my one hand so I lost control. Scotty cleaned up everything and tried VERY hard to make me feel. He then ordered pizza and now I think I have gained 5 pounds from eating cold pizza a day later.

The weather here in Oceanside has been remarkable! We are waking up to the sun and enjoying it until about 8:00 pm every evening. The one draw back, and I really shouldn’t complain, is that the house gets really hot when we have constant sun. We are currently at 78 degrees inside (at 10:00 am) with all of the windows open. It seems such a shame to close the shutters and keep the sun out. I have to say that I am the most surprised by Scotty because when we first moved in we had the AC and fan going all day every day. I guess he didn’t like the $300 SDG&E monthly gas/electricity bill. We have figured out our routine now- we turn on the AC an hour or so before bed and when we have guests. Well, we’ll also turn it on if it gets to be 80 degrees inside! We are definitely roughin’ it!

Time to go put on the bathing suit and head to the beach for Sunday Funday!!

It’s about time to update you all on my summer to-do list. Just to keep myself in check, of course. Over the summer I had several things I wanted to get accomplished. Here is where I am at today:
– Cleaned the grout
– Started reading for fun
– Finish my Masters Project- I am not completely done with this yet, but I have made significant progress worthy of mention. To date the whole project is written. Of the 5 chapters all have been written and 1-4 have been edited and are ready for publication. I have submitted my final chapter for my professor’s approval. I then have to do my reference page and appendix. The goal here is the have everything done, printed, and submitted by the time I go back to work (August 21- most important day of the year actually)
– Clean shutters- lower floor only so far
– Learn Spanish- this really should not be mentioned here because I just picked up the headphones for the first session of Rosetta Stone yesterday, but hey you gotta start somewhere, right??
– Cleaned ceiling fans for the first time since move in date 3.5 years ago (gross, I know). I did the bedroom one but can’t reach the office one because there is no furniture in there to stand on!

So, I think I have made some pretty good headway on my summer chores. Yes, there is always more to do!
– Clean the garage
– Coat 2 on the grout (ran out of Soft Scrub first time around)
– Submit Masters project
– Finish classes (for good, maybe?? Something always comes up though!)
– Clean office ceiling fan
– Clean upstairs shutters

Plenty to do!!

So like I mentioned yesterday I am supposed to be eating soft foods: noodles, yogurt, fish, chicken, rice, etc. Well very few of these things are in my diet, in fact only rice and chicken make an appearance. So last night I had pasta while Scotty enjoyed a sausage kabob and corn-on-the-cob. I decided that wine would be OK to drink as long as I kept me head at a 90 degree angle and let the sweet juice slide down my through opposite the gum grafting. All was well. So today I pushed it a little bit further. For breakfast I had some eggs, to which I added a little left over taco meat- anything to avoid eating somewhat healthy! For lunch I bit the big one and had my mini burritos- chicken, rice, and beans. Oh yeah, I added Taco Bell hot sauce (good buy mom, love that stuff!). I did give the burritos one minute to cool! I also kept my head to the side but was not as smooth. I immediately washed my mouth out with the extra strength mouth wash prescription. Oh, I forgot, I also had cheese-its. Hey, they are NOT chips so I figured if the doc wanted me to stay away from them he would have said no chips OR crackers. I sucked on them a little bit to make them soft, which was a great experience because I love salt. I was good about one thing though- I didn’t have coke to drink. I am trying to drink more water anyway, so if I gain anything from this experience, maybe it will be to hydrate myself more often.

Moral of the Blog- some rules are meant to be broken…. and I love junk food!
